you could try checking out the Luce Line trail. It starts at Theo Wirth park and just goes west from there.

The begining isnt the most scenic, but if you push into it a little bit you get out in farm country, and its pretty with rolling hills and pastrures around you. also a few areas to stop along lakes as well.

otherwise the lillydale loop is pretty and close to mpls/st paul. gets you down into the river valley if youre looking for something shorter. you could do a loop close to something like this:
