I know this thread's pretty old, but here are a couple ideas:
go to a particular store in the mall of america (for a longer distance ride i guess...or some other mall. southdale?)
Handstand for at least 1 second
A hop-scotch course
Puzzles: complete a 20-40 piece kid's puzzle. or... A where's waldo or eye-spy puzzle.
chubby bunny
Name as many African countries as you can?
A math problem in your head (1234+5678=?)
Eat 7 saltine crackers without drinking anything

That was a fun stop to run. The look on their faces when they found out what they had to do when they couldn't buy and drink a beer was priceless. One year in the St. Ides Race, them had to eat 6 merengue cookies and drink the St. Ides. To this day, me hates merengues. Me curse that them ruined a good St. Ides. Needlesstosay, it was a messy outdoor stop.

I dont know if this has been said yet, but a Pizza Boy race. get a few local pizza places down with it, make them a stop, and the first one to stop at all of the pizza places wins. or they have to do some sort of delivery of proof that they were there. I did something like that in Montana, and it was a pretty fun race.

I was trying to put together a jimmy johns race once where you had to go to each of the bike delivery jimmy johns in mpls and do a delivery there. Get the manifest stamped twice, once at the apartment or whatever that ordered and then again at the jimmy johns after the delivery was completed. Was thinking of making it a "Jimmy Johns Olympics" full of stuff that the drivers deal with all the time..."Where the eff are my chips?" then have to go back and get chips and roll back to get the stamp.

How about we can have a couple of the stops be wrestling matches. Whoever shows up next you wrestle and so on. Like you need to pin the person for 3 seconds before you go. If you lose then you wrestle the next person until you win.
